Healthy Recipe: Cauliflower Pizza

Just by cutting wheat from our diets, we can go a long way towards keeping our weight down and staying healthier. Try this nifty little recipe... I'm willing to guarantee the whole family will love it (and be none the wiser).


Ingredients:
1 cup cooked cauliflower, fresh or frozen, coarsely grated. (Don't pack it into your measuring cup.)
1 cup grated mozzarella cheese
1 beaten egg

Method:
Pre-heat oven to 180 degrees Celsius
Mix the ingredients together.
Grease a baking sheet and dump the contents of your mixing bowl in its centre.
Flatten into a "crust" shape. Top with fennel seeds and bake for 15-18 minutes until golden.
Remove from oven, spread with pizza sauce (commercial, homemade – it doesn't matter. You can even use spaghetti sauce straight from a jar and just sprinkle with extra oregano, basil and garlic. Top with more mozzarella cheese and place under the grill until melted and bubbly.

If you want to add other toppings, they need to be pre cooked (sautéed veggies, like leftovers work great), but because you cook the crust beforehand, there isn't enough time to cook toppings under the grill.
